A smooth tingling piece. Using great berries from local producer Rokkedyssegaard. The choice fell upon the Polka berry. To balance the ganache, gastrique from Fejø Cider is added giving it some acidity. Based on chocolate from small bean to bar producer Zart Pralinen in Austria.
